The answer is Water isn't allowed in the Nether. To keep the snowball from becoming water it must stay snow.

I had never beaten the dragon because I've just never gotten that far lmao Every survival world I make, I get super bored almost immediately The first and only time I've done it was on a server where we had made it that far, and I did it solo because no one else was active. (I went through the painful process of getting end crystals so they could respawn it, don't worry)

Finally someone we can rely on to beat the world record

To be fair, some of these tricks are useful. For example, securing the area around your nether portal or setting a respawn point with backup gear before going to the end.

Crazy simple mining navigation trick. always place torches on the left wall as you go. that way, to return home you just turn so the torches are on the right hand wall and follow them home. This system has some flaws, you can mess up - if the cave loops you can end up with a tunnel that will lead you further away from home if you follow it as above, but generally speaking with some sense you should be immune to getting lost.

The guide can't be that bad if it recommends beds for the dragon. That's a legit speedrunning tactic.

Before you go to the end. It is recommended to have an elytra and a dragon egg for flexing.

Wither Skeletons are easy, just dig two by one block trenches or 3 block bars above your head so that they can't pass or reach you. Bring a high saturation food like golden carrots or steak to heal if you get hit, it'll make it a whole lot safer to deal with the wither effect.
